On unix, fig format is pretty nice because it can be be 
edited (in xfig) and translated to bazillions of other
formats (with fig2dev).  I always set up a makefile the
simultaneously translates fig->eps for latex inclusion
and fig->png for (ugh) powerpoint inclusion.  

In the future, svg is probably the way to go, but I haven't 
gone there yet myself.
