That's exactly what gnome-edit does - it runs the text editor which has
been configured as the default in Gnome Control Centre.

The file associations currently only work with Gnome (due to me being
totally unable to find any docs for how to set them under KDE, whereas
the Gnome docs I found were just unclear and unhelpful). So people who
use KDE can't use them.
There's no bias here incidentally, I use neither Gnome nor KDE.
